PORCINI MUSHROOM CREAM

INGREDIENTS (SERVES 4):


  • 400 g fresh porcini mushrooms
    1 leek, 30 g flour
    1 cup milk
    2 cups vegetable stock
    1 tbsp chopped parsley
    3 tbsp extra virgin olive oil
    30 g butter
    salt and pepper

Prepare some stock with many vegetables, and simmer until it is reduced to a very concentrated liquid. Carefully clean the mushrooms, keep the three best caps, cut all the others in pieces and cook for 10 minutes with oil and finely chopped parsley.
Prepare a béchamel sauce with butter, flour, milk and salt, then add it to the mushrooms and cook for 15 minutes, adding the stock and simmering on a medium heat; 5 minutes before completion blend the mix with a mixer.
Cut the caps put apart in slices, quickly fry them in a pan with a few oil and parsley, then add them to the soup with salt and pepper and serve hot.
